Incidence of Listeria monocytogenes in wild animals in Japan.
Between 1991 and 1993, the intestinal contents and feces of wild animals in Japan were examined for the presence of Listeria. The wild animals examined included 623 mammals (11 species) and 996 birds (18 species). Listeria species were isolated from 38 (6.1%) of the 623 mammalian samples and 133 (13.4%) of 996 bird samples. The highest incidence of Listeria in the mammals was found in Japanese ...
متن کاملRisk analysis and meat hygiene.
Meat hygiene consists of three major activities: post-mortem inspection; monitoring and surveillance for chemical hazards; and maintenance of good hygienic practice throughout all stages between slaughter and consumption of meat. Risk analysis is an applied science of increasing importance to these activities in the following areas: facilitating the distribution of pre-harvest, harvest and post...
متن کاملWild Meat and Biodiversity
African bushmeat includes ungulates such as forest antelope, known as duiker (Robinson and Bennett 2000), reptiles and large-bodied birds (Bennett-Hennessey 1995), smaller-bodied mammals such as porcupines and cane rat (Fa et al. 1995), and primates. In west and central Africa, bushmeat primates include monkey and chimpanzee (Willcox and Nambu 2007), baboon and colobus (Chapman et al. 2006), ev...
متن کاملCarbohydrate metabolism in meat animals.
Oxidative energy production is by far dominant in living animal muscles, with the exception the short periods of severe stress, where the aerobic capacity is exceeded, and formation of large amounts of lactate and protons will take place. Energy consumption in muscle cells continues post-mortem with formation of large amounts of lactate and protons, because the aerobic processes for energy prod...
متن کاملLipid metabolism, adipocyte depot physiology and utilization of meat animals as experimental models for metabolic research
Meat animals are unique as experimental models for both lipid metabolism and adipocyte studies because of their direct economic value for animal production. This paper discusses the principles that regulate adipogenesis in major meat animals (beef cattle, dairy cattle, and pigs), the definition of adipose depot-specific regulation of lipid metabolism or adipogenesis, and introduces the potentia...
